Chiang Mai: The Rice Fields

An intricate lattice of trails lies around the rice fields near Four Seasons Resort Chiang Mai, set in the heart of an area once known as the Lanna Kingdom – “the land of a million rice fields.” From growing it on the property to incorporating it into dishes like risottos at Terraces and mango sticky rice at the private dinner in the rice barn, the grain is a vital ingredient in the Resort’s celebration of Thai traditions.

Padi Yuthasastrkosol, the Guru of Rice Planting and the Nature Trail at Four Seasons Resorts Thailand, understands the importance of the fields. “Rice is the culinary elixir of Thailand, and is an integral part of every meal,” she says. “A lot of the country’s livelihood depends on the rice fields, so they are revered in Thai culture as a sign of prosperity.”

One of the best ways to experience the beauty of the fields is to savour a private breakfast there. Enjoy the morning breeze while while sipping delicate tropical juices or rice milk, and then choose a Western breakfast of baked goods and eggs or a traditional Thai breakfast of pa thong ko (Thai doughnuts) or khao tom (boiled rice with cured pork sausage in a chilli lime sauce). It’s the perfect start to your day – and the best time to take advantage of the morning light, which makes for excellent photographs.

Golden Triangle: From Your Deck to the Heart of the World

After a night in the peace of the Deluxe Tent or the safari-style Two-Bedroom Explorer’s Lodge at Four Seasons Tented Camp Golden Triangle, step out onto your expansive private deck and into the jungle. The Golden Triangle (an area comprising parts of Thailand, Laos and Burma) is home to dense bamboo forests and fields formerly planted with poppies, all within sight of your luxury accommodations.

From your perch among the palms, capture breathtaking images of the property’s rehabilitated elephants, framed in the morning by curls of mist. “The gentle giants roam free in the distance, grazing in the landscape,” says Reza Jafari, the Camp Manager. The view is equally stunning in the evening, perhaps with a glass of wine or after a massage in the outdoor sala (outdoor pavilion).

After a day spent exploring the scenic mountain trails – accompanied by elephants – or cruising down the Ruak River aboard a traditional longtail boat, return to your Deluxe Tent for a relaxing soak in your private hot tub as you watch the sun set over the river, Burma and the mountains of Laos.

Koh Samui: From Here to Infinity

Four Seasons Resort Koh Samui. The Gulf of Thailand blends into the Resort’s crystal waters, punctuated by swaying coconut palms stretching from the beach to the sky. Breakfast Bounty

The best way to kick-start a holiday on Bora Bora is with a tropical breakfast. Yogurt topped with fresh fruit and a dusting of crunchy granola is practically de rigueur because it’s protein-rich yet light enough to keep you feeling swimsuit-ready. Place your order at the breakfast buffet, choose à la carte or stay in the coddling comfort of your suite and ask for the Canoe Breakfast. Who wouldn’t want a morning meal delivered by ceremonial Polynesian canoe?

With fresh exotic fruits, pastries, omelettes and, of course, yogurt on offer, Executive Chef Eric Desbordes says proudly, “Our extensive options really do make this the most important meal of the day.” And if you do opt for delivery by canoe, be sure to take advantage of the complimentary whirl around the pontoons as your dining area is being prepared.

Stretch Yourself

“Yoga is even better for the body and soul when it’s done over the water,” spa director Stephanie Cherbakow says, referencing the additive calming effects of the sea. Within the lagoon-side Spa, the yoga deck is lofted over the sea, serving as a site for private yoga classes.

AFTERNOON

Take a Snorkel Safari

The calm waters of the Resort’s Ruahatu (God of the Ocean) Lagoon Sanctuary are home to more than 100 species, including sea urchins, peacock damselfish and anemones. Join Louis Sabadel, a marine biologist at the Resort, for a snorkeling session as educational as it is awe-inspiring. Curious about the larger marine ecosystem in Bora Bora? Rinse and Repeat

You haven’t experienced a proper outdoor shower until you’ve bathed in your very own, set on a wooden platform above a crystalline lagoon. “All 108 of our Overwater Bungalow suites offer an outdoor shower on a private deck,” Resort Manager Diego Stembert says. Or, after a soak in your bungalow’s oversized tub, step straight from the bathroom onto your private wooden deck to take in the fresh sea air – an invigorating interlude during a day of adventure.

EVENING

Twilight seems to last longer at this longitude . . . all the better for tucking into a leisurely multi-course dinner on your private deck. “Even with all of our amazing restaurants, most of our guests will enjoy at least one private dinner in their suite during their stay,” says Desbordes. “There’s nothing like a table for two over the water and under the stars.” Among the choices on the in-room (or on-deck) menu: locally caught sautéed mahi mahi with virgin coconut sauce, with Taha’s vanilla crème brûlée for dessert.

An Illuminating Display

Bora Bora culture is always on the agenda here, and every Monday night the Resort presents a Polynesian Dinner Show with traditional local music and fire dancing. “Our Polynesian Dinner show is a great opportunity for guests to mingle,” says Chef Concierge Etienne Baldeschi, “and the performances are truly captivating.” Not to be overshadowed is the menu: Offerings include coconut salad, crab cakes and Tahitian Firi Firi doughnuts.

Aim for the Stars

There may be no better way to cap off a perfect day in Bora Bora than taking in a light show: the stars. The low level of artificial light here means they’re as glittery as can be, especially on a private evening boat charter.

“The night skies here are stunning, and you can enjoy the stars from anywhere, but from the water is the ultimate,” says Baldeschi. You and your guests depart at dusk, sailing as the sky morphs from azure blue to marmalade orange, and stop at a private motu to watch, with bubbly in hand, as the stars appear.

My Four Seasons: Manolo Blahnik’s Milano Retreat

Manolo Blahnik is a citizen of Spain who headquarters his eponymous brand in London, but he’d be the first to tell you that the real magic happens in Milan, one of his favourite cities. The iconic shoemaker, who still whittles by hand the wooden forms that shape his inimitable creations, maintains several factories there.

“Milan is a city to discover,” Blahnik says. “It inspires me tremendously.”

For nearly three months out of every year, he sojourns in the fashion capital to personally oversee the transformation of his designs into wearable works of art. His residence of choice? Four Seasons Hotel Milano, where Blahnik has been a regular guest for more than two decades.

“My friends’ homes are my favourite places, but the first thing I do when I’m in Milan is to go to the Duomo.”

Milan is a city to discover. It inspires me tremendously.

“It’s my home away from home,” he says. “I’ve been coming here since the beginning … The people, the service and the food are all impeccable and to my taste.” Blahnik has returned to the same room for the past 22 years: “Room 212, my humble home.” When it came time to film the newly released biographical documentary, Manolo: The Boy Who Made Shoes for Lizards, the Hotel was a natural location for director Michael Roberts, who captured select scenes there.

Blahnik is charmed by the building itself, which was a convent in the 15th century. And he has fostered close relationships with many Four Seasons staff members. One of those special bonds is with his long-time housekeeper, Ignazia Gammicchia. “We met many years ago,” he says. “She’s a woman from another generation – such a warm person, with the most beautiful manners. I adore her!”

“I adore the Palazzo Morando, where we had our [Art of Shoes] exhibition earlier this year.”

The Hotel has also partnered with the designer to introduce the Manolo Blahnik Package. With this special offering, in addition to a daily Continental breakfast, guests receive a signature pair of velvet and satin Manolo Blahnik slippers – made exclusively for the Hotel – and a foot treatment for two at the Spa.

“It was an homage to film director Ferzan Özpetek. I also thought about Turkish slippers, the deep navy with the gold embroidery,” Blahnik says of his design. “Simple, but very elegant.”

How and when were you first inspired by mixology?
It was destiny. I used to play with syrups at my grandma’s house in France, mixing flavours into water.

What has been one of your more memorable creations?
When the parents of a frequent client visited from Venezuela, I created a cocktail inspired by the mother: ancho chile liqueur for her strength, rum for her sweetness, and cinnamon and saffron syrup for grandmotherly warmth. After I delivered it to her she cried, hugged me and said it was the most valuable gift and she could taste that it came from the heart.

What do you love to share with visitors about local traditions and nature?
Being a Masai and growing up in a traditional village, or boma, I have always lived in harmony within the rich ecosystem here. My culture teaches the beauty of nature: that the trees, mountains, rivers, lakes and wildlife rejuvenate the body and improve one’s mood and creativity.

What other cultural education projects have you worked on?
I’ve assisted researchers with archaeological digs at Olduvai Gorge, and recently contributed to an episode on the Masai for BBC’s History of Africa.

Is there anything about your approach to food that surprises guests?
The intensity of some of the flavours I use can be surprising. I often focus on a specific ingredient, like coffee, for the bitterness it brings to a dish, and guests may not expect that.

How do guests influence your cooking?
A famous French philosopher told me there was a dish in my restaurant he didn’t understand—he thought it was missing something. Although I was upset to hear it, I agreed with him. I spent hours reworking the dish, and now it’s a guest favourite.

When were you first inspired to share your knowledge?
When I was in the military, I met a lot of people from different places who wanted to learn about Hawaii in depth. It started there, and I wanted to continue sharing the culture.

What do you personally love about Hawaiian culture?
The aloha says it all: a is for akahai, kindness expressed with tenderness; l is for lokahi, unity expressed by harmony; o, ‘olu‘olu, agreeableness expressed by pleasantness; h, ha‘aha‘a, humility expressed through modesty; and a, ahonui, patience expressed by perseverance. That’s aloha.

What do you love about the art of carving?
Carving is part of Bali’s culture. Most of our inspiration comes from our folk stories, and no two pieces are the same because they come from the imagination of the artist. The beauty lies in the intricate details of each piece.

What is the most important idea you want guests to take away from their lesson in woodcarving?
Be courageous. Woodcarving is not rocket science, yet most people are afraid to try. There is no wrong or right, and a mistake can always be fixed. Just like other things in life, we simply have to take a risk.

What drives you to share your passion with guests?
By teaching visitors more about the ocean and the diversity of its marine life – from its microscopic plankton to its largest residents, such as the whale shark – I want to create a lasting bond between our guests and our marine environment.

What Do You Love About Paris?

What do I love about Paris? There’s a particular kind of soft, persistent rain here called bruine, and when it falls, it covers all that it touches with a fine mist. Wipe it away and it comes right back. It’s everywhere. You can’t escape it, and you wouldn’t want to.

The magic of Paris is simple like that. It’s subtle but impossible to miss. But what my beloved rain is to me, a summer picnic on the Pont des Arts may be to you.

I asked Parisians what they loved most about the French capital, and got different answers from each one, but all with a common theme: a deep passion for the city, and for sharing it with the rest of us.

“I’m half-American, half-French—my parents moved to France when I was 4—but Paris feels like my home turf. After being in New York for two years, I returned to Paris three years ago. I think I’ll always come back. “As a chef, finding high-quality ingredients here is easy. There are little markets throughout the city with artisans who still make their cheeses and breads in small batches. And everything here serves as inspiration for creating new dishes. Every day, I ride my bicycle past Fondation Louis Vuitton, designed by architect Frank Gehry. It looks like a giant ship – and it inspired me to create my signature dessert at Le Cinq, givré later.”

“When I arrived in Paris in 1988, it was love at first sight. As an artist, I found inspiration everywhere, and 29 years later, I still do. This is a city where you can be fully with others, and also be fully in your own space and time. I wear what I wear, I eat what I eat – keeping aspects of my Indian heritage – and then I take good things from the French culture. Paris lets you live the way you are.”

“When I moved to Paris, the first thing that hit me was the light – as a photographer, it was like being in a candy store. Because of the sandstone buildings, there’s all of this reflective light, and you can photograph anyone, anywhere. I couldn’t stop. I stayed, though, not just for that, but for the strong sense of community. There’s a specific energy you don’t find anywhere else. It’s something my children have benefited from: To speak all of these languages and to have friends from all of these different cultures, it makes them open-minded.”
